8 weeks in....
Wow! It's been eight whole weeks since we opened our doors and started trading! Sometimes, it feels like an instant, but other times, especially when we look back on that first opening week, so much has happened and we've learned so many lessons in that time, it feels like eons ago.
We realised pretty quickly that we'd initially taken on a wee bit too much to start off with. Baking the loaves of bread took a lot more time and effort and only yielded a small result. But we knew we wanted to bake fresh bread, so we found a compromise by baking fresh rolls and filling them with all sorts for lunches. IT seemed such a shame to stop making the loaves, but we came to the conclusion that we had to walk before we could run. it's one of the things the shop and the kitchen will be able to progress into.
The Brownies, Cookies, Traybakes and other treats have proven more popular than we could ever have dreamed, and we're so glad! Mark's always had a passion for baking, using good, fresh ingredients wherever possible and sharing the joy of creating these delicious goodies with everyone has made him a very happy man! We're always looking to experiment with new recipes as well, so suggestions are always welcome.
We've been asked quite a few times about doing Hot Filled rolls as well as the chilled ones. We did give this a go as an experiment on Gala Day and, though it worked quite well, there's a couple of bits of equipment that would mean it would be much more manageable for us to do regularly, so we're looking to invest in those when possible and give it another go.
Finally, we'd like to say a massive Thank you to everyone who has visited the shop and suggested stock or suppliers, or even just been patient with us while we found our feet. We couldn't have done it without you and we're so glad to be able to offer new things, adapt and grow into the sort of place this community needs.
